Special Batch
Alongside our three everyday coffees, we always keep at least one Special Batch — pricier, harder to source, and we change it through the year.
This one wants milk. Pull it as a cortado or flat white and the orange blossom and peach turn silky, the milk chocolate deepens, and a bright note of green grape cuts straight through — the kind of cup that makes black-coffee purists reconsider.
Grown by smallholders around the Gigesa Washing Station in Shakiso, Guji Zone, this heirloom varietal is fully washed and dried at altitude — high enough to keep things floral and light, with a delicate, tea-like body that carries under milk instead of disappearing into it.
Best as: Milk-based espresso (cortado, flat white, cappuccino)
